Flour, Edison All-Purpose T85 HWS Wheat(2003) COG

Edison Hard White Spring Wheat was created by a retired school teach and wheat breeder that lives just down the road in Edison, WA. It grows well in our climate and soils and produces a flour that has a sweet, nutty, mild flavor that is perfect for bread and pastries. The flour is 10 - 11% protein and a little more extensible than the stronger hard red spring wheat flours. It is great when blended with our Valley Cream Pastry Flour for pastries, biscuits and scones or with stronger hard red spring wheat for bread and pizza dough. This is my kids favorite flour because it does not have the slightly bitter or coffee flavor that comes with the hard red wheat flours.
