Then we go wild with two ingredients that have made this bar a legend in our little circle. The first comes from our neighborhood Co-Op’s bulk bins: organic candied ginger. Sweet at first, then that bright, buzzing spice — these chewy golden bits give the chocolate texture in every way. Then comes the chai: Steep Mountain Tea’s Storm Castle Chai blend. We tested nearly a dozen of their incredible chai blends before choosing this one; it just SINGS in dark chocolate. Ground tea — rooibos, carob, clove, and natural vanilla — folds straight into the bar. Organic, caffeine-free, and named for a ridge that touches the sky, it’s bold, warming, and perfectly unruly.
