Suet is specifically the internal fat surrounding the kidneys and other organs in cattle. (The pork equivalent is leaf lard.) Suet can be used directly for a variety of cooking needs, or rendered into tallow to use as a cooking oil, to make candles, lotions, etc. Use it also to add moisture, binding, and flavor to lean elk meat, especially for burgers and sausage. Suet is also a nutritious, high energy food source for many wild birds- ideas on making your own: https://www.birdsandblooms.com/birding/attracting-birds/feeding-birds/make-suet-birds/ Baking with Suet from Serious Eats: https://www.seriouseats.com/the-nasty-bits-baking-with-suet
