Corn and Zucchini Pancakes
Shredded zucchini, corn and scallions make savory pancakes. Serve them plain or add yogurt, salsa or herbs.

Let’s make it
- Wash your hands and prepare a clean work surface. Press grated zucchini in a colander over a bowl, leave for 10 minutes, then press again.
- Chop the scallions and whisk the eggs. Drain and rinse canned corn if using. Mix zucchini, corn and scallions with eggs, then mix in flour, baking powder and salt.
- Heat a skillet over medium heat and add oil. Follow nonstick pan instructions if oil must go in before heating.
- Spoon 1/4-cup portions into the pan with gaps between them. Cook until golden underneath, about 5 minutes; turn and cook about 5 minutes more. Repeat with the remaining batter.
