Potato and bean soup

Onion, potatoes, a can of beans, and tomato paste simmered in water. Mash a few potatoes against the pot to thicken it.

Let’s make it

  1. In a large pot over medium heat, add the oil. Saute the diced onion for 3 to 4 minutes until translucent, then add the potatoes and cook about 2 minutes more.
  2. Pour in the tomato paste, beans, and 2 cups of water and stir to combine.
  3. Simmer the mixture, uncovered, for 20 to 25 minutes.
  4. For a thicker soup, smash some of the potatoes with the back of a spoon and stir. Season to taste.
