Layered enchilada bake

Torn tortillas layered with a bean, pepper, and tomato filling and cheese, baked twenty minutes. Add shredded chicken or ground meat if you have it.

Let’s make it

  1. Heat the oven to 350 F.
  2. Heat 1 tablespoon of oil in a frying pan over medium heat. Add the onion and pepper and cook 2 to 4 minutes, until tender.
  3. Add the tomatoes and spices and cook 2 minutes more. Add the beans and stir to combine.
  4. Tear the tortillas into bite-size pieces.
  5. Coat an 8-inch baking pan with 1 tablespoon of oil. Layer half the tortillas, half the filling, and half the cheese, then repeat, ending with cheese.
  6. Bake uncovered for 20 minutes.
