Lentils of the Southwest

Green or brown lentils simmer with onions, tomatoes, cumin and chili, then finish with fresh cilantro. A small side to serve with the rest of your meal.

Let’s make it

  1. Combine lentils and 1 1/4 cups water in a small pot. Bring to a boil, reduce heat to low and cook uncovered for about 30 minutes, until tender.
  2. Heat oil in a skillet. Cook onion and garlic for 3 to 5 minutes, until tender. Add cumin, red chili pepper and chili powder; cook on low heat for 2 minutes.
  3. Mix the seasoned onions into the cooked lentils. Add the remaining 1/4 cup plus 2 tablespoons water, tomatoes and salt. Bring to a boil, then simmer uncovered on low heat for 20 minutes.
  4. Stir in cilantro immediately before serving. Serve hot.
